And the name of this venture is Shen Odaka, chef & owner of a restaurant in Tokyo, japan. She is the sole author developing the Japanese knives Blog

A glimpse into our past
About 10 years ago, the founder of Sharp Edge Shop, Luka, wanted to purchase a quality kitchen knife. Unable to find one in Slovenia, he decided to travel to Japan in search of the perfect blade. After months of searching, he finally found a knife that met his exacting standards. He was so impressed with the craftsmanship and quality of the knife that he decided to start a business dedicated to bringing these amazing knives to people all over the world.
And thus, JapaneseKnive was born! Since then, we’ve been working hard to bring you the best selection of Japanese kitchen knives. We’re proud to offer a wide variety of sizes and styles, all crafted with the same attention to detail that Luka found in his first knife.
As Luka hosted a group of aspiring young chefs in his store based in Ljubljana, Slovenia, one of them asked him how he got into working with Japanese knives. This made him reflect on how he had stumbled upon this world by chance; coming from a random background of student turned sport climber turned high-rise builder, he had moved into his first apartment and decided that with this new-found adult life came a quality kitchen knife.
